Sugar Free Fruit Cake

For Friday Food and Fitness today I’m going to share with you a delicious and sugar-free fruit cake recipe. It’s pretty easy to make and tastes  good.  The only unusual ingredient is the Apple Juice Concentrate.  As it sounds it’s simply highly concentrated apple juice.  Which works to bring  a little sweetness without the refined sugar and is available from your local health food shop.  I was planning to make this as my birthday cake a few weeks back – but better late than never hey!

 INGREDIENTS

825g tin of peaches
1kg bag of dried fruit
1/2 cup of brandy (or sherry)
1/4 cup of Apple Juice Concentrate
3 cups of SR flour
1 cup of wholemeal plain flour
2tsp of cinnamon
1/4 tsp of nutmeg
3 eggs
1/2 cup of Pecans


METHOD 

Drain peaches and keep the juice aside
Mix the dried fruit with the peach juice and brandy
Allow to soak overnight in the fridge.
Puree peaches
Add the purée and the  apple juice concentrate to the fruit. Mix well.
Sift the flour and spices into the mixture.  Mix well.
Beat eggs and fold into the mixture.
Pour into a large, deep, lined cake tin (or two smaller  ones)
Arrange pecan on top of the mix
Bake at 160 C for 2 hours or until  inserted skewer come out clean
(if you are using smaller tins allow less time)
Remove from the oven and let the cake stand in the tin for 10 minutes before  removing and cooling.

Sounds so yummy and so easy to make 🙂 we are having “No sugar” in our house at the moment due to my scary dentist visit! So i am needing recipes that do not have sugar in the ingredients.
